RECIPE: Chargrilled Elote

INSTRUCTIONS
1. Remove the husks and silk from each corn husk.
2. Fire up your grill and let it get nice and HOT.
3. Prep your saucy spread β€” mix the crema, mayo, lime juice, lime zest, garlic powder, chili powder, ground cumin, pepper, cayenne pepper, smoked paprika, and minced cilantro in a bowl. It’s best if you mix the spices first then add them all at once to the rest of the sauce.
4. Once your grill is hot, rub your corn all over with butter, place them on the grill and close the lid. Grill corn about 10 minutes total, flipping them and close the lid again every 3 minutes or so to get all sides nice and charred.
5. Remove corn from the grill, and brush it generously with your saucy spread.
6. Sprinkle cotija or queso fresco on top of each corn + add chopped cilantro and your desired amount of chili powder.
7. Serve with fresh lime wedges & enjoy with loved ones!

CILANTRO LIME MEGJITO

Fill your desired glass with ice & add fresh squeezed juice of one meyer lemon and one lime. Pour over ice equal parts TopoChico Lime + fresh limeade (I use 1/2 cup each), cilantro & mint leaves. Garnish with a lime wedge and enjoy!
