RECIPE: Basil Pesto & The Perfect Steak
INSTRUCTIONS
1. Roast your garlic for about 45 minutes in the oven at 400 F. Remove and let cool completely.
2. In a high power blender, pulse basil leaves, pine nuts, parmesan, and roasted garlic (skins removed).
3. Scrape sides down, then add olive oil, lemon juice, lemon zest, and salt. Pulse until smooth.
4. Taste then add pinch of fresh black pepper.
5. Pesto is ready! Set aside or place in fridge while you make the steaks.
FOR THE STEAK—
1. Preheat oven to 500 F. Turn cast iron on 30 minutes prior to using.
2. Season steaks generously with salt and pepper.
3. Place 1-2 tbsp. butter into cast iron, then add your steaks. Cook 2-3 minutes per side making a nice seared crust. Sear 30 minutes per outside edges.
4. Keeping the steaks in the cast iron, place them in the preheated oven for an additional 3 minutes (medium rare) to 5 minutes (medium).
5. Remove and let rest for 5 minutes.
Serve steaks with pesto and pasta of your choice or roasted potatoes. Enjoy!
Butterfly Pea Flower Lemonade
Fill a glass with ice, fill with topo chico, add 1/4 teaspoon butterfly pea flower powder (watch it turn blue!), then add juice of one whole lemon (watch it turn purple!), and garnish with fresh lemon slices.
